      Theo Chocolate cofounders Music and Whinney have authored a multipurpose cookbook that includes a company history, an overview of bean-to-bar chocolate manufacturing, and a selection of contemporary recipes. Emphasizing environmentalism and sustainability, the recipes highlight company partnerships with nonprofit organizations, artisanal producers, and fundraisers. Intermediate to advanced cooks and confectioners, particularly those with adventurous palates, will gravitate toward the book's more unusual offerings (e.g., chocolate chili churros, fig fennel ganache confection, pumpkin-filled chocolate ravioli with sage brown butter, pears, and hazelnuts), while novices will stick to the more traditional baked goods and frozen desserts (e.g., Theo chocolate chunk brownies, salted caramel tart, chocolate sorbet). VERDICT Though light on technical instruction, this book contains a compelling range of sweet and savory recipes.
